12 Days of Christmas: Coconut Macaroons.

Here is another simple, sweet and festive recipe for you. I have never made macaroons before this year, but I’m glad I finally did. Umm.. four ingredients? Immensely coconut-y? Look like fluffy snowballs? Fantastic.

Ingredients (for 22 macaroons):
4 egg whites
3 cups sweetened, shredded coconut
2/3 cup sugar
1 tsp vanilla

To Make:

1. Preheat oven to 350F, and line a cookie sheet with parchment paper.

2. Plop all ingredients into a medium size pot. Place over low heat and let thicken for 7-9 minutes, stirring regularly.

3. Spoon 2 inch sized scoops onto your prepped cookie sheet. You’ll know the mixture has thickened enough when the scoop holds it shape without liquid puddling around the bottom.

4. Bake the cookies for 15-20 minutes, or until nice and toasty brown. Cool cookies on the baking sheet for a nice crunch on the bottom.
